Sin embargo, no hay duda de que las mejores versiones se encuentran en todas esas comarcas; de hecho, el plato ha dado lugar a una fiesta tradicional all\u00ed llamada La Xatonada de Vilanova.<\/p>\n\n\n\n<p>Las disputas sobre qui\u00e9n hace el mejor xat\u00f3 son habituales entre las poblaciones vecinas de Sitges y Vilanova. Para zanjar la cuesti\u00f3n, las regiones organizan concursos para ver qui\u00e9n prepara el mejor xat\u00f3, pero es un dilema que probablemente nunca se resolver\u00e1, ya que todos los implicados est\u00e1n convencidos de que su versi\u00f3n es la mejor.<\/p>\n\n\n\n<p><strong>\u00bfDE D\u00d3NDE VIENE EL NOMBRE XAT\u00d3?<\/strong><br>El origen del nombre de esta ensalada tampoco est\u00e1 claro, aunque circulan algunas teor\u00edas. La primera sostiene que xat\u00f3 toma su nombre de la palabra \u00abchateau\u00bb, ya que la ensalada emplatada se parece a un castillo o una mansi\u00f3n.<br>La segunda teor\u00eda sostiene que el nombre procede del momento en que los campesinos y marineros pinchaban un vino nuevo la bota de vi. En cualquier caso, habr\u00e1 que conformarse con estas hip\u00f3tesis, ya que probablemente nunca conoceremos el verdadero origen del nombre.<\/p>\n\n\n\n<p>Personalmente, creo que a\u00fan queda mucho por explorar sobre el mundo de la anchoa. Quiz\u00e1s suene un poco chovinista, pero en Catalu\u00f1a se encuentra una de las principales empresas productoras de anchoas de alta calidad del mundo. Me interesan especialmente las anchoas de la Escala, un municipio de la comarca del Alt Empord\u00e0.<\/p>\n\n\n\n<p><strong>\u00bfQU\u00c9 SON LAS ANCHOAS SALADAS?<\/strong><br>Las anchoas saladas son el resultado del curado en sal -un proceso de conservaci\u00f3n de alimentos transmitido por griegos y romanos- de anchoas frescas a lo largo de un proceso de maduraci\u00f3n de seis a ocho meses. El maestro boquer\u00f3n es el encargado de probar el pescado y decidir si est\u00e1 listo para ser envasado, normalmente en aceite de oliva.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">TRADICIONES<\/h3>\n\n\n\n<p>Desde el nacimiento de la anchoa en salaz\u00f3n, las mujeres de la villa de la Escala, llamadas anxoveres, se encargaban de quitar las cabezas y las colas al pescado, filetearlo y despu\u00e9s envasarlo uno a uno. Este proceso, impecablemente realizado a mano, es un oficio transmitido de madres a hijas, y una tradici\u00f3n a\u00fan vigente.
